What's For Dinner?

I got out thick pork chops to thaw. I just thinly sliced them up.

I am thinking of winging it and doing something fun and zesty with them like making them into a Mexican Fiesta dish with garlic, fresh tomatoes, beans, corn, and cheese on a bed of Spanish rice.

William promised to put his elbows on the table (in defiance) if I did that with the pork chops instead of frying them up the normal way. So I sent him to his room.

He came down a while later and apologized-- but I anticipate some dinner drama anyway.

Chicken Enchiladas!! They are a family favorite!

Bubble Pizza! You take 2 cans of canned biscuits (we like the flaky kind) and cut them into fourths and put them in a greased casserole dish. You pour 1 regular sized jar of spaghetti sauce over the biscuits. Bake at 375 for 30 minutes, then sprinkle shredded cheese over the top - as much as you like - and bake for another 10 minutes. Voila! You can play with this recipe by putting cooked hamburger meat, pepperoni, mushrooms, etc, in before baking. We love it!

We're going out. I am sick of cooking. Had company all weekend and all I seemed to do was cook , and we are going away tomorrow for a few days, so we are starting tonight with dinner out! Your dinner sounds good though I have to say :-)

Sour Cream Chicken Fajita Enchiladas....

Corn tortillas warmed on lightly oiled pan and set aside.
Chicken Fajita Meat. (gluten free btw)
Fiesta Brand shredded cheese
1 white onion diced
tamed jalapenos

Sauce:
!/2 cup of heavy whipping cream
1/2 cup vegetable broth
knorr chicken boullion (1/2 tsp)
1 tsp garlic
1/2 tsp onion powder
dash of salt
ground pepper to taste
1 tsp parsley flakes
chopped fresh cilantro
2 cups of sour cream
1/2 cup of tamed jalapenos with juice

heat all ingredients together until smooth and creamy

In a 9x9x12 pan, place a corn tortilla flat, add a little chicken a little cheese a little onions, and roll to make enchilada.
You should be able to make 14 to 16 enchiladas. Pour sauce and spread on top.
If you have any diced chicken left put on top and sprinkle more cheese on top.

Microwave for 10 minutes on medium turning 1/2 way inbetween.
or bake at 400 for 40 minutes.

YUM! Serve with rice and beans.

Hospital food...but it wasn't too bad.
Penne with marinara sauce, peas, strawberries, mozzarella sticks, milk, and pudding.
I shudder to think what my husband is preparing for the children at home. ;)

Sweet and Sour Cucumbers

Chicken breasts (butterflied, seasoned, and baked)

Milk, coffee, apple juice

Reece's dessert (just because) :-)

Ack! You just made me realize that I forgot to put the ham in my Split Pea with HAM soup - off to do that now. See, you are just so inspiring to me ;)

I took Sergei and Zhen to Steak and Shake after soccer camp. What a treat! And Craig took Anastasia to Subway because they couldn't wait that long. Ilya was rude and had the good sense to give himself a time out before we gave it to him.

My husband actually took me out. Just the 2 of us! One of our older sons watched the other kids. All 11 of them. We went to Olive Garden and a movie to celebrate our 28th anniversary!

BLTs--the first we've had this season. The tomatoes aren't ready in our garden yet, but my sister-in-law shared from hers!

Jeff made some burritos with hot sauce for us and without for the girls.

It was so nice to come home from work today and have dinner waiting for me :)

Tomorrow'd dinner: Gefilte fish, Golden soup, baked chicken and kugeln, for dessert a dairy free chocolate cake. :)

Weel tonight I'll bake a vegetables pie to eat at my friend Bouchra's. My first idea was to make stuffed eggs with tuna, mayonnaise and mashed potatoes, but I'm not sure Muslima are allowed to have vinegar (it is in the mayonnaise) so I came to the idea of the pie. I'll ask about vinegar tonight.

slices of potato, tomato and onion olive oil salt and fresh oregano, all in the oven for half an hour...

aw~ we don't have warm dinner in my family anymore (just at times, when mom or me myself find some time to make one which is not so usual)so I just grabbed some bread, butter and jam...
do you cook dinner for your family everyday? (I'm so jealous :D )
