Ingredients:
2 cubes butter (1 cup)
3 cloves minced garlic
2 cups chopped carrot
2 cups chopped broccoli
1 cup chopped yellow, orange, and red sweet bell pepper
32 oz. thin spaghetti or any pasta
2 tsp. salt
1/2 tsp course black pepper
2 1/2 tsp. original Mrs. Dash
2 pounds cooked (shelled) shrimp (rinsed)
1 cup shredded parmigiano-reggiano cheese
Melt better in big pan. Add garlic and chopped veggies. If your feeling adventurous, mix it up a bit and substitute any veggies. Add seasonings and saute until veggies are tender.
If your anything like me, I hate when my seafood tastes or smells fishy.
So I rinse my shrimp first and make sure that it is precooked so that the other ingredients isn't cooked with the shrimp leaving all of the other flavors to stand out on their own. This is how I get my daughter Rachel who hates shrimp to eat this dish. She simply picks them out and give them away to her siblings.
Cook pasta according to directions. Add shrimp to the veggies for the last minute of cooking to heat through.
Mix everything together adding cheese last.
And I mean it---- ENJOY! And try not to mind when your husband takes the leftovers to work leaving you with nothing.
Now if I can just get over to Costco to buy some shrimp. :)

Mmmm, looks and sounds yummy! Now, my question is, for the ingredient list, will this make a large enough portion for your whole family or do you double it? I ask so I know how much I need for my household ;)

I bought a two pound bag of frozen cooked shrimp at Costco - and neglected to defrost it overnight. It would have been lovely in our alfredo sauce, but the alfredo was lovely plain too. Now I know what to do with my shrimp!
