It can be a bit time consuming, until you get used to it but I usually will just sharpen, brighten & increase the hue a bit to brighten up the color on my pictures.
I love editing my photos, and it really doesn't take that much time. Usually I brighten or darken (depending on the lighting in the photo), add either cross process or cinema, and add a little vignetting. It only takes a minute but makes the photo look SOO much better. I love using Photoscape to do my editing. The best part is it's FREE and has all the good editing tools. Pretty simple to use, too! :)
I try to take photos that don't need enhancing, but sometimes there is a colour cast caused by reflected light or artificial light, or other faults that I want to fix. Lightening shadows is another one and adding a bit of saturation to washed out phots, but I don't do it often.
I do enhance my photos, but just learning about it. I also crop them so the junk in the picture isn't there. I am learning and do most of my picture editing on picnik.com.
I like the first one too, it's much clearer. The only time I enhance mine is when they're too dark or too light. I used to crop my photos a lot when I first started scrapbooking, but found myself regretting it later because I wanted more of the surroundings in the photos. That's all part of the memory.

I love to enhance photos! And if you do it correctly it is definitely worth it! If you don't have time/don't want to bother with it too much, just hit "auto brightness/contrast" - even this alone makes a big difference.
I ALWAYS edit, crop and enhance mine. But I am crazy!! lol It makes the world of difference to me. Especially portraits. I like the second picture better. The colors are brighter which is just more appealing to me.
I like the crop tool the best, but sometimes it is just FUN to photoshop! Especially when you have a photo that didn't quite come out right... you can still salvage a nice photo from what would otherwise be a total loss. Sometimes, you can take a photo that is a bit too bright, and rather than trying to enhance it, switch it to black and white or sepia.

If it's a good photo I leave it alone. I sometimes play with contrast, saturation, but not often.

Depends on my time and the picture. I do edit most of them by cropping and adjusting color. I like to fiddle around with Picnik just for fun.

Aside from the odd cropping, I don't think there's much else you need to do with your photos!
