Getting Creative With Food.....

and losing too. I've lost four pounds.


One night for dinner we had chicken breast and crumbled bacon on a bed of lettuce with cucumber, radish, red onion, tomato, and olive. Who said you couldn't eat veggies? All of these foods are okay and as long as you keep it under 20 carbs a day, you can splurge and have a little more veggies which I am doing.


For lunch today we had the most delicious meal. I made my own dip with spinach, red onion, tomato, Monterrey jack cheese, and cream cheese. It tasted so good!

I topped about 1/4 cup of the dip on a bed of two scrambled eggs with a slice of ham on the side. Then I had a small serving of sugar free jello. I enjoyed this meal very much and it was completely satisfying in every way.

Tonight I forgot to take a picture of the delicious beef, onion, and bell pepper fajitas we had on a bed of lettuce topped with Monterrey jack cheese. Again, very yummy, and not at all boring.

And the best part is that John is following along--- no problem.

That dip looks awesome. I am trying to lose weight also. I am at 6 pounds and would really like to lose 30 more. You are right, the pounds really add up quickly when we aren't watching. If i had known I would have eaten lots more when I was younger. lol.

What a crazy time you have been having lately... Praying for you with everything in your life at the moment and egging you on with that diet! YOU CAN DO IT!

You make dieting look yummy. My problem isn't diet. My weight never varies much, but I wish there was a 'yummy' way to exercise. It doesn't get any easier as I get older.
You are doing great!

I know it makes it easier that everyone is on board with you... it won't take long to make your goal. Your food always looks so good!! I am trying to loose weight as well... I have lost 6 pounds so far....I am cutting what I eat in half and eating more slowly drinking only water and walking everyday. It truly is a mindset.

We will all feel better soon!!

If you start craving something sweet while on Atkins, try these babies.....you can find recipes for different versions on Google. I would recommend only using the freezer, not the fridge like the recipe suggests, and do drops about the size of a peppermint candy....the sweetness goes a long way and you really don't need a huge spoonful size. Let me know how you like them!

Congratulations!! My husband is changing his eating habits and lost 10 lbs in 2.5 weeks, I've lost 3. I have less to lose but it's fun for us to do it together. I love your food ideas...gonna snag a few!!

I love that you've already lost some weight. Not so here. But I just started this morning..

Scambled egg with salsa.

Salad with grilled chicken for lunch..

Pretty good..
Um.. two chocolate truffles.. not so good. :( (valentine candy sent to me from my married daughter..she didn't know I was trying to slim down a bit. )
