My girls love when I make this for them. It is a little taste of Russia and Ukraine that always brings a smile to their face. I've also come to enjoy this healthy and delicious drink that is wonderful hot or cold.
Berry Compote

Put 32 oz. of mixed berries in a big pot. I make two batches at a time and use the whole 4 pound bag from Costco.

Add one cup of sugar.

Add 12 cups of water.

Ladle 1/4 cup of the sugar water into a bowl and dissolve 2 tablespoons of corn starch. Add back to berry water. Cook on medium, bring to boil, stirring occasionally. Simmer for at least 1/2 an hour. Serve hot or chill. Add a squirt of lemon juice for a little extra flavor.

Enjoy!

Yummy!
By the way, the photos of your kids on the side bar are really nice. I love the close-up on their faces! They all look special!
I remember our facilitator explaining compote to us in Moscow (we had a 12hr layover there so we paid our agency's RU facilitator to be our tour guide for the day). Looks like something the boys would love!
I made a cake tonight using a Ukrainian drink mix I found at a Russian grocery store. It turned out really well and the boys have been going wild over it, mostly because it's strawberry flavored I think :)
I am sooo glad you put on the compote recipe. We at dinner at our Translator's house while in Kaz and she had compote.....I loved it and Nick drank it like crazy too. Since we cannot get him to eat any fruit but banana and apple, I have been thinking about figuring out the recipe and now I don't have to.... Do you have any good cabbage recipes. Someone said the kids love cabbage. We have not had it much here but I was thinking that it probably taste different there. He will not try any veggies unless it is a negotiated bite....I have the only Kaz child that will not eat everything. He would try any meat but anything else is iffy. I love the sidebar pics too. The kids are all just beautiful. I could just squeeze your 4 year old...he and Nick would have a great time!
Love the cupckes! We had a cupcake wedding cake...I felt like such the trendsetter...even before Martha Stewart put it on the front of her magazine! :) Karen
Oh, I will have to use this recipe soon...we are doing a unit on berries, using the book "Jamberry!" We'll have this with Blackberry Brownies!! Yummmmmmmmmmo
Thanks!!
I will make this for Elena. I remember drinking it in Kaz.
That sounds so good! I'll have to try that! Thanks!!
Thanks for following our adoption adventure. Of course you may add post our blog, and the little girl we are going for will be 4 in February!
That sounds wonderful! Especially on a cold, foggy, rainy day like today (I think we slipped back into England somehow... we aren't in Cairo anymore toto!) I'm trying to get the kids to like berries. They won't touch them. Esp. not in the yogurt based smoothies I like to blend up, but not even blended straight in with ice cream.
OT: I'd love a post about how your older kids handle being older than their classmates, especially as their hormones kick in and their classmates don't. It's a subject that's been on my mind recently...
YUM! Sounds good.
thanks for the recipe. I need to try it. Happy belated birthday Analyn.
You always have the best food photos ever. You should think about going pro:) Looks wonderful, what a sweet way to keep them connected.
Thanks for the invitation to this blog :). You love the children, and your children of darlings. A good example for me :). I badly know English language, I use the electronic translator, and I am sorry for possible mistakes :). How you have time to give care and attention to each child? You have what greater hearts for acceptance of the following child!
Hey! Just wanted to let you know that we tried this today and it's DELICIOUS! Thanks!
Help! I am finally going to make this to go along with our study and need to clarify...is the # of cups listed for 4 lbs of berries? Thanks!
