They are sooo yummy! They are a lot of work because the recipe calls for a lot of dry ingredients and they take muscle power to mix together, but they are so worth it, and my big strong Adam did most of the mixing anyways. :) Plus, they are choke full of healthy oatmeal, nuts, and coconut.If you love cookies like I do, then you will enjoy this recipe. Feel free to throw in some chocolate chips too, but IMHO they taste better without them.

Ranger Cookies
1 c. sugar
1 c. brown sugar
1 c. butter softened
2 eggs
1 tsp. vanilla
2 c. flour
1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 c. oatmeal
1 c. coconut
1 c. chopped nuts (I prefer pecans)
Cream sugars and butter together. Add eggs and vanilla and continue to beat until smooth. Set aside. Mix together flour, baking powder, baking soda, and salt. Add to butter mixture and stir well. Add remaining ingredients. Stir (this is where the muscle power is needed) well. Drop by tablespoon on cookie sheet and bake for 10-15 minutes in a 375 degree oven.

Those look so delicious. I have been dreaming of homemade baked goods the whole time we have been here. I ordered hot chocolate the other night from the hotel - YUK! Watery, not chocolate flavor - brown but not chocolate... Even the whipped cream was strange. Having these less than desirable desserts is a good thing. I think I may be losing a little. So, I'll have a better chance to break even after the Christams holiday, right?! :) I'm going to try this recipe with the girls when we are together again.

I use a heavy potato masher (the s-pattern wire, not the solid grill type) to mix dry ingredients. Mashing is less painful than stirring (and I bend less spoons ;-D!) Works for breads, and the limited cookie recipes I've used at any rate
This is PAINFUL! Technology needs to advance to the point that you could send me a couple of these RIGHT NOW!
Connie, I would try putting the brown sugar in a plastic bag with a wet wadded up paper towel in it. Micorwave for 10 seconds and see if the sugar is any softer.
Good idea with the masher, I'll have to try it.
